Ingredients 

  • 1 small Carrot
  • 1 teaspoon Pineapple Extract
  • 4 tablespoon Natural Peanut Butter
  • 1 tablespoon Ginger fresh, minced
  • ½ Lemon juice only
  • 8 oz Cream Cheese full-fat
  • 1 teaspoon Erythritol
  • 2 cups Water
  • Ice optional

Instructions

  • Add the pineapple extract with the peanut butter, ginger, lemon juice, cream cheese, and Erythritol in a blender.
  • Add ice if you prefer your smoothie ice cold.
  • Process until smooth and divide into glasses. Serve cold.

    I am assuming you have to shave the carrot because it doesnt state anything about it in the instructions

      Hey Ashley! Depending on how powerful your blender is you may have to cut or shave the carrot. Hope that helps!

    You say 1 carrot - but carrots are many sizes. How much of a cup do you equal to 1 carrot?
    Is 1 cup of cream cheese 8 oz of cream cheese - the whole brick?

      Hi Carol! This recipe calls for 1 medium carrot around 2.5oz.

      And yes, 1 cup of cream cheese is an 8 oz block. Enjoy!
