For our Keto Baked Zucchini Balls you'll need to grab:

  • 1 Zucchini
  • ⅔ cup Mozzarella Cheese
  • 2 Eggs
  • 1 clove Garlic
  • 2 tablespoon Olive Oil
  • ½ teaspoon Paprika
  • ½ teaspoon Oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Let's get started!

First, preheat your oven to 390°F / 200°C and line a baking pan with baking paper.

Next, you'll need to grate your Zucchini and then squeeze it together tightly to remove all the liquids.

It's really important to remove as much liquid as possible so that the dough holds together, so you may need to do this a few times!

Now you'll want to whisk your eggs and mince your garlic clove.

In a large mixing bowl add the grated zucchini, whisked eggs, garlic, mozzarella cheese, paprika, oregano, salt and pepper.

Knead the mixture together for a couple of minutes and then shape it into balls ready to bake!

Place the zucchini balls on your lined baking pan and drizzle over your olive oil.

Bake the zucchini balls in your preheated oven for 15 minutes, remember to turn the pan halfway through so that they cook evenly!

Ingredients 

  • 1 Zucchini
  • ⅔ cup Mozzarella Cheese grated
  • 2 Eggs
  • 1 clove Garlic
  • 2 tablespoon Olive Oil
  • ½ teaspoon Paprika
  • ½ teaspoon Oregano
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper

Instructions

  • Preheat the oven to 390°F/200°C and line a baking pan with baking paper.
  • Grate the zucchini and squeeze to remove all liquids. Don’t skip that step, it’s important to remove as many liquids as possible to get the perfect texture and a dough that holds.
  • Whisk the eggs and mince the garlic.
  • In a large mixing bowl mix the grated zucchini with the eggs, garlic, mozzarella cheese, paprika, oregano, salt and pepper.
  • Kneed for a couple of minutes and shape into balls.
  • Place on the lined baking pan and drizzle with the oil.
  • Bake in the preheated oven for 15 minutes flipping the pan half way through to cook evenly.
  • Serve warm.

    Can't wait to try these - zucchini has become my favorite vegetable! I just bought an air fryer, can I make these in that? If so, what temp/how long to bake?
