This is the time of the year where we enjoy the last fresh peppers and the first cauliflowers of the season.
Why not combine the two and mix them up with spicy sausages, garlic and herbs in foil?
This cooking technique is great for delicate ingredients like the peppers that we using here while keeping the cauliflower florets tender and the sausages juicy, as it acts like a shield in the oven.
Keto Sausage Foil Packets
To make these delicious low carb sausage foil packets you'll need:
- 4 chopped Pork Sausages (4 links -⅞" dia x 4" long)
- 2 cups Cauliflower Florets
- 4 Red Peppers cut into strips
- 1 large Onion (sliced)
- 4 Garlic cloves (whole)
- 4 tablespoon Butter
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 1 tablespoon Fresh Dill (to garnish)

Let's get cooking!
First, preheat your oven to 350°F and spread out 4 pieces of tin foil, each about 2 feet long.
Next, create layers of the ingredients, starting with the pepper strips, onions, cauliflower and finally sausages.
Add the cloves of garlic whole, in between to infuse flavor.
Season with salt and black pepper.
Now, add a tablespoon of butter on each parcel and fold the foil tightly to enclose all the ingredients.
Bake for 30 minutes in the preheated oven.
Serve hot and garnished with fresh dill, enjoy!
