    Easy Roasted Red Peppers

    Roasting red peppers at home couldn’t be easier, and these roasted red peppers are delicious, healthy, and super versatile! All it takes is a few steps, and you will never have to waste money on buying a store-bought jar again.

    They also have a sweetness that the ones from the store cannot beat, and you don't have to worry about added ingredients. This roasted red peppers recipe makes the same as a 16 oz store-bought jar, usually costing at least $5.20.

    Ingredients You'll Need

    • Red peppers - Particularly good for roasting because of their natural sweetness and high water content. The roasting process causes the water to evaporate and concentrates the natural sugars in the pepper, making them sweeter and more flavorful. They also develop a smoky flavor that adds an extra depth of flavor to the peppers and the dishes in which they are used.
    • Oil - We spray or brush the red peppers with olive oil before baking.

    How To Make Roasted Red Peppers

    Roasting red peppers is a simple and easy way to bring out their natural sweetness and add a burst of flavor to any dish. Follow these step-by-step instructions and enjoy the taste of homemade roasted red peppers in no time.

    • Preheat the oven. Heat your oven to 480 degrees Fahrenheit (250 degrees Celsius) and a baking tray with baking paper.
    • Prepare the peppers. Slice your sweet red peppers into halves lengthways. With your hands, remove the stem and as much of the white pith and seeds from the inside as you can.

    • Transfer to the baking tray. Place the red peppers on the tray cut side down, and give them a brush or light spray with olive oil.

    • Roast the peppers. Place the baking tray in the oven for around 25 minutes or until the red pepper's skin is slightly blackened and blistered.

    • Transfer to a bowl. Remove the tray from the oven and transfer the roasted red peppers into a bowl. Cover with plastic wrap and leave on the bench top at room temperature for an hour. This will allow the peppers to sweat and start to steam off the skin.

    • Peel the peppers. Remove the plastic warp from the bowl and peel the skin off the peppers. Some people will wash them under cold water to remove the skin, but I find that that will cause the peppers to lose some of the charred sweet flavors. I recommend taking the time to try and peel them without running them underwater.

    Storage Instructions

    Store your roasted red peppers in an airtight container or jar in the refrigerator. They will last about 4 days, or if you cover them with olive oil, they will be good for a couple of weeks.

    • 2 regular Red Peppers
    • 1 teaspoon Olive Oil

    Instructions

    • Preheat the oven to 480°F (250°C) and line a baking tray with baking paper. Cut your red bell peppers in half lengthways and remove the stem, pith, and seeds with your hands. Place them cut-side down on the tray and spray or brush with olive oil.
    • Bake in the oven for around 25 minutes or until the skin of the peppers is blistered and slightly blackened.
    • Transfer to a bowl and cover with plastic wrap for around 1 hour.
    • Remove the plastic wrap, and gently peel off the skin from the flesh of the peppers.
