Ingredients

  • ½ cup Peanut Butter
  • ¼ cup Pumpkin Puree
  • ¼ cup Erythritol granulated
  • 1 Egg
  • 2 tablespoon Chocolate Chips sugar-free (Lily's Sweets Dark Chocolate Chips)
  • 1 tablespoon Coconut Flour
  • 2 tablespoon Pumpkin Pie Spice
  • 1 teaspoon Cinnamon
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Erythritol powdered
  • ¼ teaspoon Salt

Instructions

  • Preheat the oven to 350°F and line a large baking tray with a baking sheet.
  • Combine all the ingredients in a large mixing bowl and mix with an electric or hand mixer for 20 seconds until well combined and lump-free.
  • Scoop the batter into 12 cookies and place them on the prepared baking tray. Flatten the dough with a spatula or the back of a spoon.
  • Bake in the preheated oven for 15-20 minutes. Allow to cool on a rack and serve.
