- Preheat your oven to 350°F (175°C) and line a baking sheet with baking paper. 
- In a mixing bowl, whisk together the almond flour, coconut flour, ¼ cup granulated sweetener, baking powder, and salt. 
- In another bowl, beat the eggs, melted butter or coconut oil, and vanilla extract until well combined. 
- Add the wet ingredients to the dry ingredients and mix until a thick dough forms. 
- Scoop tablespoon-sized portions of the dough and roll them into mini churro shapes. 
- Place the churro bites on the prepared baking sheet, leaving space between each one. 
- Bake in the preheated oven for 10-12 minutes, or until golden brown and firm to the touch. 
- While the churro bites are baking, mix the remaining ½ cup granulated sweetener and ground cinnamon in a shallow bowl. 
- Remove the churro bites from the oven and let them cool slightly. Brush each bite with melted butter or coconut oil, then roll them in the cinnamon-sweetener mixture until coated.
