Instructions
To Make The Steak Bites
Pat the steak cubes dry with paper towels. Season with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the steak cubes in a single layer, ensuring not to overcrowd the pan. Sear for 1-2 minutes on each side or until browned. Cook in batches if needed.
Remove the steak bites from the skillet and set them aside.
To Make the Garlic Butter Sauce:
In the same skillet, melt butter over medium heat.
Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Stir in the thyme and let it cook for an additional 10 seconds.
Return the seared steak bites to the skillet, tossing them in the garlic butter sauce until they are well-coated.
Transfer the steak bites to a serving plate, drizzle with any remaining garlic butter sauce.
Garnish with fresh parsley.
To Make the Carnivore Butter Sauce:
In the same skillet, melt butter, ghee, or beef tallow over medium heat.
If you want an extra boost of umami, pour in a tablespoon of warm bone broth into the butter and scrape the skillet to make a quick meat-forward glaze. Totally optional, but totally delicious.
Return the seared steak to the pan, coat in that luscious buttery glaze, and serve immediately.
