Garlic Butter Steak Bites Recipe

Ingredients

  • 1 lb Sirloin or Ribeye Steak cut into bite-sized cubes
  • 2 tablespoon Olive Oil (If carnivore, swap for beef tallow, ghee, or lard)
  • 4 tablespoon Butter unsalted
  • 4 cloves Garlic minced (skip if carnivore)
  • 1 teaspoon Dried Thyme (skip if carnivore)
  • Salt and Black Pepper to taste
  • Fresh Parsley chopped, to garnish (skip if carnivore)

Instructions

To Make The Steak Bites

  • Pat the steak cubes dry with paper towels. Season with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the steak cubes in a single layer, ensuring not to overcrowd the pan. Sear for 1-2 minutes on each side or until browned. Cook in batches if needed.
  • Remove the steak bites from the skillet and set them aside.

To Make the Garlic Butter Sauce:

  • In the same skillet, melt butter over medium heat.
  • Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Stir in the thyme and let it cook for an additional 10 seconds.
  • Return the seared steak bites to the skillet, tossing them in the garlic butter sauce until they are well-coated.
  • Transfer the steak bites to a serving plate, drizzle with any remaining garlic butter sauce.
  • Garnish with fresh parsley.

To Make the Carnivore Butter Sauce:

  • In the same skillet, melt butter, ghee, or beef tallow over medium heat.
  • If you want an extra boost of umami, pour in a tablespoon of warm bone broth into the butter and scrape the skillet to make a quick meat-forward glaze. Totally optional, but totally delicious.
  • Return the seared steak to the pan, coat in that luscious buttery glaze, and serve immediately.
