In a food processor or blender, puree the mixed berries until smooth.
In a medium mixing bowl, mix together the coconut-flavored Greek yogurt with the sweetener.
Prepare a muffin tin by lining it with cupcake liners or silicone molds.
Spoon a small amount of the yogurt mixture into the bottom of each muffin cup, filling it about ⅓ full.
Layer the pureed mixed berries on top of the yogurt layer in each muffin cup, leaving some space for the final layer of yogurt.
Then, top with another layer of the yogurt mixture on top of the berries, filling the cups to the brim.
Optionally, sprinkle with shredded coconut.
Place the muffin tin in the freezer and let the yogurt bites set for at least 3-4 hours or until completely frozen.
Once frozen, remove the yogurt bites from the muffin tin and store them in an airtight container or a freezer bag.
