  • Base
  • 1/4 cup almond meal
  • 1/3 cup Shredded Coconut unsweetened
  • 1 tablespoon powdered sweetener
  • 2 tablespoon Butter melted
  • Filling
  • 250 g Cream Cheese softened
  • 200 mL Coconut cream
  • 2 tablespoon Cocoa powder
  • 2 tablespoon powdered sweetener
  • 2 teaspoon Coconut Essence


  • Base
  • Preheat oven to 160C and grease 8 holes of a standard sized muffin tin.
  • In a small bowl, add the almond meal, coconut, powdered sweetener and the melted butter, using your hands, mix well until everything is combined
  • Divide the mixture into 8 and press into the holes of the muffin tin. Bake for 10 minutes until golden brown
  • Filling
  • In a bowl place, all the ingredients for the filling, mix on low until everything is
  • combined, once combined mix on medium – high for 3 minutes
  • Spoon the mixture evenly over the cooled bases, Place in the refrigerator for one hour
  • before serving
