Ingredients
For the base
- ¼ cup Almond Meal
- ⅓ cup Shredded Coconut unsweetened
- 1 tablespoon Stevia
- 2 tablespoon Butter melted
For the filling
- 9 oz Cream Cheese softened
- ¾ cup Coconut Cream
- 2 tablespoon Cocoa Powder
- 2 tablespoon Stevia
- 2 teaspoon Coconut Essence
Instructions
For the base
- Preheat oven to 320 F / 160 C and grease 8 holes of a standard sized muffin tin.
- In a small bowl, add the almond meal, coconut, powdered sweetener and the melted butter, using your hands, mix well until everything is combined.
- Divide the mixture into 8 and press into the holes of the muffin tin. Bake for 10 minutes until golden brown.
For the filling
- In a bowl place, all the ingredients for the filling, mix on low until everything is combined, once combined mix on medium – high for 3 minutes.
