    Keto Chocolate Cheesecake with Coconut

    For the base

    • 1/4 cup Almond Meal
    • 1/3 cup Shredded Coconut unsweetened
    • 1 tbsp Stevia
    • 2 tbsp Butter melted

    For the filling

    • 9 oz Cream Cheese softened
    • 3/4 cup Coconut Cream
    • 2 tbsp Cocoa Powder
    • 2 tbsp Stevia
    • 2 tsp Coconut Essence


    For the base

    • Preheat oven to 320 F / 160 C and grease 8 holes of a standard sized muffin tin.
    • In a small bowl, add the almond meal, coconut, powdered sweetener and the melted butter, using your hands, mix well until everything is combined.
    • Divide the mixture into 8 and press into the holes of the muffin tin. Bake for 10 minutes until golden brown.

    For the filling

    • In a bowl place, all the ingredients for the filling, mix on low until everything is combined, once combined mix on medium – high for 3 minutes.
